Serves: 8

1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1/2 cup chopped nuts (e.g. walnuts, pecans)
1/2 cup chocolate chips
1/4 cup shredded coconut (optional)

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together flour, baking soda, and salt. Set aside.
In another bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy and smooth.
Add the egg and vanilla extract to the butter mixture and mix well.
Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
Fold in the chopped nuts, chocolate chips, and shredded coconut if using.
Drop tablespoon-sized dough balls onto the prepared baking sheet, leaving space between each cookie.
Bake for 12 minutes or until the edges are golden brown.
Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a cooling rack.
