Banana Bread

Ingredients:

2 to 3 very ripe bananas, mashed
1 teaspoon lemon juice
2 1/2 cups all-purpose flour
1/2 cup unsalted butter
1/4 cup milk
3 1/2 teaspoons baking powder
1 cup white sugar
1 egg
1 teaspoon salt


Directions:

Preheat oven to 350°F (175°C).
In a small bowl, mix mashed bananas with lemon juice, and set aside.
In a medium bowl, mix flour, baking powder, and salt, and set aside.
In a large bowl, add butter, sugar, and egg and beat until creamy.
To the butter mixture, add the flour mixture alternately with the milk.
Fold in the banana mixture.
Pour batter into a greased loaf pan.
Bake for 60 to 70 minutes or until a toothpick inserted into the center of the loaf comes out clean.
Let the loaf cool in the pan for a few minutes, then turn out onto a cooling rack.
