Ingredients:
1 pound crabmeat, picked free of shells
1/3 cup crushed crackers (Ritz is recommended)
3 green onions, finely chopped
1/2 cup bell pepper, finely diced
1/4 cup mayonnaise
1 egg
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1 tablespoon lemon juice
1 tablespoon fresh parsley, minced
1 teaspoon Old Bay Seasoning
1 tablespoon butter
1 tablespoon olive oil
Directions:
In a large bowl, mix together crab meat, crushed crackers, green onions, and bell pepper.
In another bowl, whisk together the mayonnaise, egg, Worcestershire sauce, dry mustard, lemon juice, and parsley. Add this mixture to the crab meat mixture and incorporate thoroughly.
Shape the mixture into 4 large patties. If the mixture is too loose, add a bit more crushed crackers until you achieve the desired consistency.
In a large skillet, heat the butter and olive oil over medium heat. Once hot, add the crab cake patties and fry for about 4-5 minutes on each side or until golden brown.
Once cooked, transfer the crab cakes to a plate lined with paper towels to drain any excess oil.
Serve immediately with your favorite sauce or lemon wedges.
